This is not merely a flavor pitch: the proposed 2-ounce pilot includes pasteurized egg yolk, cultured dairy, sealed cups, lot traceability, temperature logging, allergen labels, and a recall-ready operating plan. It is a remarkably specific attempt to rebuild a familiar restaurant condiment around a different oil—and it is explicitly not for sale yet.
