Tsubo-yaki Imo no Kumasan, Hiroshima’s Slow-Roasted Sweet Potatoes
A Hiroshima sweet-potato maker slow-roasts熟成さつま芋 in charcoal-heated ceramic pots, then sells it frozen, as chips, and in desserts.
Field notes
Each potato is suspended above Binchotan charcoal inside a ceramic pot, allowing circulating heat and radiant heat to cook it without direct flame for more than two hours. After inspection, the potatoes are vacuum-packed and frozen rather than sold only at the moment of roasting. The operation lists seasonal varieties, four product categories, an Ujina sales booth, and wholesale distribution to locations including a spa and a roadside station.
