The public menu is organized as five distinct formats rather than a generic service catalogue: market-led Huerta, tasting menu Travesía, celebration menu Sobremesa, coal-cooked Brasa and late breakfast Media Mañana. Individual courses specify techniques and ingredients, including tomato dashi, miso brown butter, heritage potatoes and plantain brûlée. The chef says the work takes place in the guest’s own kitchen, with service and clearing included, while enquiries are handled through email, phone or WhatsApp.
