The restaurant’s central device is the noodle itself: each portion is hand-kneaded after ordering, producing deliberately uneven texture. Its recommended mazemen sequence moves from mixing to raw-egg dipping, seasoning with vinegar, house chili oil, garlic sauce, and fish powder, then finishing with rice and broth. The 16-seat shop operates near Honmachi Station, offers 200g–400g mazemen portions, and marks the 22nd of each month as “Buttoku Day.”
